Vitus Winkler was awarded his fourth Gault Millau toque in fall 2019 and has since been celebrated as the shooting star among Salzburg's young chefs. Together with his wife Eva-Maria, he runs the family's own four-star hotel with its own gourmet restaurant "Kräuterreich - by Vitus Winkler". There he conjures up a new Austrian identity on the plate with his original creations.

On Wednesday, March 6, the Salzburg native will be a guest at the à la carte restaurant "das Mezzanin" at the invitation of INTERSPAR and will cook a 4-course menu together with the kitchen team on site. The celebrity chef will personally guide all guests through the culinary evening at "das Mezzanin".

Four-toque chef Vitus Winkler and his wife Eva-Maria will amaze guests from all over the world in their gourmet restaurant and on this evening also in the INTERSPAR à la carte restaurant "das Mezzanin".

It starts with a greeting from the kitchen with summit stone, hay stadl and pumpkin tea. The first course, a "herb bath" for the palate, consisting of a salmon trout marinated in herbal tea with radish rose and watercress, is served with verve. This is followed by a tender hour egg, which gets its name from being cooked for an hour at a constant temperature. This gives the egg yolk a creamy consistency and the egg white remains perfectly soft in texture. For the main course, the toque-awarded chef conjures up a 16-hour cooked Tafelspitz with carrot rarities and carrot cabbage. To round off this taste experience, Vitus Winkler cooks a "forest base" with blackberries, spruce, tree beard and wood sorrel.

The fine dinner must be accompanied by a matching wine. This comes from INTERSPAR weinwelt and is presented by the in-house sommelier. With good food and a fine drop of wine, guests can get their own impression of the undisputed king of the herb kingdom and indulge themselves in the beautiful "das Mezzanin" in the Haus am Schottentor!
